Sylvain Gaudron's Les Vaux Louis Sec is a dry white wine produced in the renowned Loire region of France. Made entirely from Chenin Blanc grapes, this wine expresses the unique characteristics of this grape variety in an exemplary manner. The harvest is carried out manually to select only the best grapes, guaranteeing a high quality of the incoming grapes. The choice of the ideal moment for harvesting is crucial to obtain the right ripeness and balance between acidity and sugars. After harvesting, the grapes are softly pressed to extract the must flower, the noblest part of the grape juice. This is done under low pressure to avoid the extraction of bitter substances and tannins. The must is then transferred to steel vats where alcoholic fermentation takes place. Sylvain Gaudron often opts for a slow fermentation at low temperatures (around 12°C) to preserve the fruity and floral aromas of Chenin Blanc. Once fermentation is complete, the wine matures in steel vats for a period that varies depending on the vintage and style desired. This allows the wine to stabilise and develop its aromatic complexity. Finally, the wine is bottled and left to rest in the bottle for a few months before release. It can be kept in the cellar for several years, developing more complex and mature notes.
