Pecorino Terre di Chieti 2023

The Pecorino white wine of Tenuta Ulisse is produced with 100% Pecorino grapes grown in the hills not far from the coast of Ortona in the province of Chieti. It is characterized by the mineral and flavorful character typical of the grape. Pecorino is an indigenous grape variety from the Marche region from the Sibillini Mountains, now widespread between the Marche and Abruzzo; it tends to give fresh wines with good structure. The name "Pecorino" is most likely linked to the fact that the vineyards were crossed by the shepherds returning from pasture in September, when the harvest was carried out, being an early ripening variety.

After a careful selection, the best bunches are refrigerated and undergo a cryomaceration. They are then de-stemmed and pressed to extract the must. This is clarified by natural cold settling. Alcoholic fermentation takes place in stainless steel vats at a low temperature. The wine ages in steel until bottling.
