Moscato d’Asti 2022 Bio

Moscato d'Asti is the lighter version of Asti Spumante; it is a sweet, light-bodied wine, low in alcohol, with a delicate fizziness. Its strong point is the aromatic scent, but in addition to the scent, Ceretto’s Moscato d'Asti stands out for its ease of drinking given by an excellent balance between acidity, fizziness and sweetness. Served very chilled it can also be a valid aperitif, but its destination in the Piedmontese tradition is at the end of the meal with light fruit desserts or with the great leavened cakes of the Italian tradition such as Panettone and Pandoro.

After the harvest, the Moscato grapes are pressed and the free-run must is clarified and stored at a low temperature. At the moment of production, alcoholic fermentation is started in stainless steel vats at a controlled temperature. Fermentation is stopped when 5-5.5% alcohol is reached by chilling it. The wine is filtered to eliminate the yeasts and is bottled with the natural residual sugars of the grapes not yet fermented and a slight over-pressure that creates the pleasant effervescence.
