Merlot rosé 2023
Tenuta Ulisse had the idea of making a pink Merlot wine. In it the proverbial fruity exuberance and softness of the Bordeaux grape are enhanced. Merlot is usually vinified together with Cabernet sauvignon and Caberent franc as it brings softness, pulp and fruity notes to the blend. In purity it gives fascinating red wines for their aromatic richness, depth of taste and velvety texture. Aspects that it maintains also in this interpretation in rosé.
It is the result of a modern vinification, aimed at maintaining the purity of the varietal aromas intact. The grapes are cooled immediately after the harvest and the whole bunches undergo a cold skin maceration. The grapes are then de-stemmed and crushed. The must remains in cold maceration on the skins for 12 hours. It is pressed in an oxygen-free environment and alcoholic fermentation takes place at a low temperature in steel vats at a controlled temperature.
