Harvesting takes place overnight, using machinery to preserve the freshness of the grapes. A short, cool maceration on the skin is followed by direct pressing, ensuring that the grapes are protected from oxygen to preserve the aromatic precursors. Alcoholic fermentation at a low temperature helps to keep the delicate notes of fruit and flowers intact.
After fermentation, the wine rests for five months in stainless steel tanks, allowing its distinctive characters to develop fully.
