Capo Martino 2021
Capo Martino is a 7.5 hectare vineyard in the municipality of Dolegna del Collio cultivated with only native varieties. It represents the most authentic tradition, both in the choice of grapes and in the vinification which also includes a short maceration on the skins. It has been produced since 1991 with the idea of a wine that represents the old tradition present in these lands. The Capo Martinosi vineyard is located in a hilly position mainly exposed to the south and in the soil has the “ponca”, a name that is locally given to the clayey rock typical of the collio, formed by marl and compact sandstone of the Eocene age.
The vinification begins with a short maceration on the skin, just as it was done in ancient times. Fermentation continues in white and then the wine is aged for over a year in large oak barrels.
