Franciacorta Pas Dosé Animapura 2017
“Nomen omen” could be said about this Franciacorta from Castello di Gussago. Animapura (literally “Pure Soul”) is a Franciacorta to which no dosage is added during the final topping up of the bottles. It is therefore bone dry; the pure soul of the Franciacorta territory is laid bare, with no influence from dosage nor form oak-aging. Chardonnay and Pinot Noir are the interpreters of this execution, unique and unrepeatable in every vintage.
The grapes are harvested by hand in boxes. They are gently pressed to extract a pure free-run must. The alcoholic fermentation of the base wines takes place in thermo-regulated steel tanks. The second fermentation takes place in the bottle according to traditional method and the aging in autolysis on the lees lasts about 36 months.
