Tenuta di Salviano's Grechetto Umbria IGT wine is the result of a careful and rigorous oenological process, based on the exclusive use of Grechetto di Todi grapes, an indigenous variety of the area.
The grapes are cultivated at an altitude of 400 metres, in soils of volcanic origin characterised by a tufaceous composition with the presence of fine gravel. The south-west exposure optimises the absorption of sunlight, positively influencing the ripening process of the grapes and their aromatic profile.
Harvesting is done manually towards the end of September, at the moment of optimal phenolic ripening of the grapes. After the harvest, the grapes undergo destemming and gentle crushing to extract the must. Fermentation takes place in steel tanks at a controlled temperature of 18°C, promoting a slow and stable fermentation.
Subsequently, the wine matures on the lees until the following March and, before bottling, undergoes a light filtration with potassium caseinate cartridges to ensure the stability and clarity of the finished product. Finally, the Grechetto rests in the bottle for at least four months, allowing its aromas to intensify and harmonise.
The lack of oak ageing allows the wine to fully express the intrinsic characteristics of the grapes and terroir of origin.
