Friuli Sauvignon 2023
Sauvignon blanc is one of the most popular grape varieties in the world. It is loved because it gives intense wines with great personality. Its wines have aromas that range from herbaceous to fruity and are sometimes also enriched with mineral nuances. On the palate, in addition to the remarkable structure, it is distinguished by its great acidity, which makes it crisp and sharp. Friuli has proved to be an important area for the cultivation of Sauvignon blanc, which has been present here at least since the 19th century, when the region was part of the Austro-Hungarian Empire.
The grapes are harvested at the end of September. They are de-stemmed and left to cold macerate before the start of alcoholic fermentation in order to extract all the flavor compounds from the skins. They are then gently pressed and the free-run must ferments without the skins in steel vats at a controlled temperature. The wine then ages on the lees for 6 months in steel.
