In Pavò's Franciacorta Extra Dry Chardonnay and Pinot Noir are used in equal parts; the grapes come from the Iseo village in the Franciacorta area in the province of Brescia. The Extra Dry dosage creates fuller taste and a certain roundness, allowing this Franciacorta to be served throughout the meal and not just as an aperitif.
The fermentation of the base wines takes place in steel vats at a controlled temperature. They also completely carry out malolactic fermentation. The second fermentation takes place in the bottle according to the traditional method and the sparkling wine ages on the lees for at least 30 months.
