    Franciacorta Dosaggio Zero 2016

    Produced with Chardonnay and Pinot Noir in equal parts, Castello Bonomi's Franciacorta Dosaggio Zero of the 2013 vintage is distinguished by a fresh and slender taste, fascinating for its vibrant texture on the palate combined with a pronounced flavor intensity. This result is due to an optimal seasonal trend. In fact, the rather cool 2013 vintage allowed a slow ripening of the grapes. At harvest, the grapes maintained perfect acidity and a wealth of exceptional aromatic and mineral substances. All the grapes come from the vineyards of Castello Bonomi on Monte Orfano, the southernmost part of Franciacorta, but also the one with the highest portion of limestone in the soil due to its different geological origin. The vineyards are managed organically and the various plots are vinified separately.

    The harvest is manual. The whole bunches are pressed to obtain a pure free-run must. The alcoholic fermentation of Pinot Noir takes place in steel tanks where the wine ges for 8 months in contact with the fine lees. Chardonnay, on the other hand, ferments in barrique where it ages for 8 months. After blending the cuvée with only vintage wines, the second fermentation takes place in the bottle according to the traditional method and the sparkling wine ages in contact with the yeasts for over 50 months. It is bottled without dosage and is sold only a further year of aging in the cellar.

    Suggestions

    Serve it in large flutes. Try it with scallops au gratin.
    Recommended with: sushi and raw fish, shellifish, crab and lobster, fish.
