Extra Brut Sparkling Wine 2019
Italian sparkling wine production developed first in Piedmont, but it is in Oltrepò Pavese that the Piedmontese go to buy Pinot Noir. Since the beginning of the twentieth century, Oltrepò Pavese began a conspicuous cultivation of Pinot Noir precisely for the production of sparkling wines, up to the point of advertising its sparkling wines in New York as "Champagne d'Oltrepò". Frecciarossa was born at the very beginning of the 1900s and made Pinot Noir its strong point; today Frecciarossa vinifies it both as a still red and as a classic method sparkling wine. This Extra Brut sparkling wine is a vintage Blanc de Noirs with a fine and refreshing taste with a marked sapidity that makes it ideal both as an aperitif and throughout the meal. The Pinot Noir grapes are grown on the hills of Casteggio up to 200 meters above sea level in vineyards mainly exposed to the north.
The grapes are harvested by hand early in the morning to avoid overheating of the berries. The whole bunches are immediately pressed to obtain a pale free-run must. It is left to clear up by natural cold decanting. Alcoholic fermentation takes place in steel vats at a controlled temperature. After the second fermentation, the sparkling wine ages on the lees in the bottle according to the traditional method for two years and is dosed with only 3.5 g / l of sugars.
