Crémant d'Alsace Extra Brut Gruss is a sparkling wine produced in Alsace, France, by Gruss, a historic winery in the region.
It is a wine made from a blend of white grapes: Pinot Blanc, Auxerrois and Riesling, from vineyards with an average age of between 15 and 18 years.
The vinification of Crémant d'Alsace Extra Brut Gruss follows the classic method, i.e. the same method used to produce Champagne.
The grapes are harvested by hand at optimal ripeness, usually between the end of September and October. The grapes are gently pressed to extract the juice, the must.
Primary alcoholic fermentation: The must is fermented in stainless steel at a controlled temperature. During this phase, the sugars are transformed into alcohol and carbon dioxide.
Bottle re-fermentation: The bottles are hermetically sealed and left in the cellar for a minimum of 12 months (for Crémant d'Alsace Extra Brut Gruss) on the lees. During this period, the yeast consumes the residual sugars and produces carbon dioxide, which remains trapped inside the bottle in the form of bubbles.
