Collio Sauvignon Conti Formentini 2021

It is a crisp white wine with intriguing greenish flavors that make Sauvignon blanc always recognizable. In reality, the Conti Formentini’s Sauvignon has predominantly fruity aromas, but that typical herbal note is not lacking in the background and not even that sensation of citrusy freshness on the palate given by the acidity. Sauvignon blanc is a beloved and widespread grape variety in the world, coming from the Loire valley in the north of France; Sauvignon blanc has been cultivated for two centuries in the eastern hills of Friuli-Venezia Giulia and has found a truly favorable habitat. In fact, the calcareous-clayey soil typical of Collio and the mild microclimate with important diurnal temperature range allows this grape variety to develop its own aromatic personality to the fullest.

The grapes are harvested in early September. Before alcoholic fermentation the grapes are left to cold macerate in contact with the skins for a few hours. Subsequently, the free-run must ferments in stainless steel vats at a controlled temperature and the minimum contact with oxygen is avoided throughout the production phase.
