Champagne Rosè Billecart Salmon

Salmon Billecart Rosé champagne is a bottle that cannot be missed in a cellar stocked and passionate about bubbles.

This wine is born in the Mareuil-sur-Ay area, a few kilometers from the legendary village of Epernay. Maison Billecart-Salmon was founded in the early 1800s. It is a family business, which manages about fifteen hectares, divided into many plots that are located in prestigious areas such as: Mareuil-sur-Ay, Damery, Ay, Mesnil-sur-Oger and Avise. With this bottle, the maison manages to synthesize different characteristics of these 3 great sparkling vines without them ever entering into conflict but rather finding space and time to express themselves. After soft pressing and separate vinification, the vins clairs rest for a few months awaiting the creation of the final assembly. At the moment of the cuvée, a small percentage of Pinot Noir vinified in red is added to the bases. The second fermentation takes place in the bottle according to the Champenoise method, with a stop sur lattes of at least 48 months. In the glass we find a limpid and fascinating pink color, the mouth is soft and taut, where a subtle and dynamic fruit gives pleasure between great aromas and minerality.

Taste: delicate structure that finds space in a soft mouth where flowers and small red fruits push a sip of great balance and flavor, long and clean finish.

Suggestions

To appreciate it, we recommend a slightly large glass in order to express the expressive strength of the fruit. It goes well with a 'more French' aperitif with salted butter and salmon croutons.
Recommended with: sushi and raw fish, shellifish, crab and lobster, fresh cheese.
