The Billecart-Salmon maison was founded in 1818 by François Billecart and Elisabeth Salmon. It is one of the few great Champagne houses that has not changed hands, and is still managed by the original family today. They own 15 hectares of vineyards managed organically, they grow another 65 for rent and in addition they use to buy grapes to produce their Champagne.
The winery is located in the Montagne de Reims in Mareuil-sur-Aÿ, producing 2 million bottles a year of great success. The style of the maison is precision work, little use of wood for the fermentation of base wines and prolonged aging on the lees.
