Champagne Extra Brut Blanc de Noirs 2016 (con astuccio)
Initially this Champagne was the main vintage of the Philipponnat maison with the name of Réserve Millésimé; only since 2008 does it take the name of Blanc de Noirs alongside the Grand Blanc. The grapes come from their own vineyards in Mareuil-sur-Aÿ and partly also from purchased grapes from Mongagne de Reims; they are only Premier Cru and Grand Cru grapes. It is a Champagne made with great technical precision, which enhances the powerful and material style of Pinot Noir; however, the mouthfeel remains elegant and easy to approach.
Only the first pressing of the must is used. This ferments partly in steel vats at a controlled temperature and partly in oak vats. The wine fermented in steel also partially carries out the malolactic fermentation; the wine fermented in oak doesn’t. The cuvée is then created and after the second fermentation the sparkling wine ages for at least 5 years on the lees in the bottle and the final dosage is low.
