Champagne Brut Royale Réserve
Among the non-vintage Brut Champagnes, Philipponnat's Royale Réserve stands out for its prolonged aging on the lees and a refined, persistent and harmonious taste. It is produced with grapes classified as Premier Cru and Grand Cru of the Montagne de Reims; Pinot Noir prevails and part of wines from previous vintages are also used, stored in the cellar in wooden barrels, blended with the Solera method. It best represents Philipponnat's style, based on balance, structure and complexity.
As for the grapes of the current vintage, only the free-run must from the first pressing is used. Fermentation takes place in steel vats and the wines do not undergo malolactic fermentation. The vin de réserve, used to the extent of 20-30%, are instead aged in oak and have partially undergone malolactic fermentation. After the creation of the cuvée, the second fermentation takes place in the bottle according to the traditional method and the Champagne ages on the lees in the bottle for 3 years in the tunnels dug in the chalk in the dark with constant temperature and humidity. It is dosed with 8 g/l of sugar.
