    Cerasuolo D'Abruzzo 2022 Rosa-ae Bio

    Torre dei Beati’s rosé wine with a name that recalls the Latin declination of the word "Rosa" belongs to the regional tradition of Cerasuolo d'Abruzzo DOC. It is a wine with a deep color, a fruity aroma and an intense and mouth-filling taste. Abruzzo is one of the few Italian regions in which a tradition of rosé wines is rooted and in particular here it is the Montepulciano grape that demonstrates its versatility. Cerasuolo d'Abruzzo is normally produced by separating part of the liquid from the must of Montepulciano grapes in fermentation (practice called “salasso”). The subtracted liquid will have a more or less accentuated pink color depending on how many hours have been spent in contact with the skins. The liquid that continues fermentation without the skins becomes a rosé wine. This expedient allows the must that remains in contact with the skins to concentrate its tannic structure more and turn into a full-bodied red. In the case of Cerasuolo d'Abruzzo Rosa-se by Torre dei Beati, however, only part of the wine is obtained with this salasso technique, while another part is produced with a harvest dedicated to rosé and a white vinification, without contact with the peels. Finally, a third part is obtained with an initial cold maceration to extract color but not tannins and a fermentation of the must without skins. The result of this triple practice allows to obtain a structured wine, rich in characteristic aromas and perfectly balanced in its components: alcohol on the one hand and refreshing capacity on the other.

    The Montepulciano grapes all come from the suitable township of Loreto Aprutino at an altitude of 250-300 meters above sea level and the vineyards are grown on clayey-limestone soil and managed with organic farming. Alcoholic fermentation takes place in stainless steel vats at a controlled temperature. No aging in wood is foreseen for this wine.
