The grapes are harvested by hand in the second ten days of August.
The first-pressing must of Pinot Noir ferments in steel at a controlled temperature, while the must of Chardonnay ferments for 4 months in barriques.
Disgorgement takes place after at least 8 years on the lees, with no sugar added.
Features
Colour: intense yellow with golden reflections.
perfume: elegant, complex with notes of bread crust, custard and yellow fruit.
Taste: full, enveloping, good structure and persistence.
Suggestions
Excellent throughout a meal or as an aperitif. Try it with scallops au gratin.
Recommended with: shellifish, crab and lobster, fish, fresh cheese.
