Castelli di Jesi Verdicchio Classico Riserva Salmariano 2019
Verdicchio Salmariano stands out in the range of the company's white wines for its strength and longevity. It is now counted among the most significant Verdicchio labels of all appellations. It comes from a particularly suited single vineyard, with clayey and stony soil, at 180 m above sea level. The microclimate of the vineyard is greatly affected by the influence of the Adriatic Sea; the sea breezes favor the diurnal temperature range. The wine is made with a late harvest, a short pre-ferment maceration and a prolonged maturation on the yeasts, while the use of wood is minimal.
The grapes are harvested by hand in the middle of October. A short maceration with the skins precedes the fermentation, that occurs in steel vats at a controlled temperature. Most of the wine ages for 12 months in steel in contact with the fine lees and only 20% ages in French barriques for the same period of time.
