Cannonau di Sardegna Mustazzo 2019
Mustazzo is the name of a traditional Sardinian bold red wine produced with Cannonau grapes grown in the center of the region, in particular in Barbagia. The vines are located in an almost mountainous environment at over 600 meters above sea level and have centenary plants that produce very little grapes, but of the highest quality. Cannonau is a late ripening vine variety that tolerates hot and dry climates well, in fact it is grown in Mediterranean regions (mainly with the French name Grenache). The Cannonau Mustazzo grapes, however, are affected by significant diurnal range because of the altitude of the vineyards and ripen while maintaining a fresh flavors. The taste is rich and fruity, suitable to match the savory dishes typical of Sardinian cuisine.
The grapes are de-stemmed and softly crushed. During alcoholic fermentation with maceration, délastage is performed to facilitate the extraction of color and tannins. The wine undergoes malolactic fermentation and ages in wooden barrels and concrete tanks.
