Bolgheri Rosato Cassiopea 2022
Cassiopea is a modern rosé wine produced with Cabernet and Merlot, the vine varieties most cultivated today in Bolgheri. But rosé wine has a long tradition in Bolgheri; indeed before the advent of modern full-bodied reds, Bolgheri's most famous wine was precisely the rosé, even if until the 1980s it was made with Sangiovese instead of French grapes. Poggio al Tesoro therefore proposes a revival of the Bolgheri pink tradition with a modern, tasty and refreshing rosé, perfect to pair with seafood but not only. The grapes are grown in the Le Sondraie vineyard at 25 meters above sea level along the Via Aurelia. The soil is mainly sandy and therefore gives fine and fragrant wines. The vineyard is very close to the sea and is influenced by it from a climatic point of view. In fact, there is an incredible brightness and the climate is mild all year round, not too cold in winter and never too hot in summer. The sea breezes dry the humidity of the night and are responsible for appreciable diurnal temperature range, which is precious for the wine’s smell.
The whole bunches of harvested grapes are softly pressed to extract the freshly dyed pink must. This ferments in stainless steel vats at a controlled temperature of 14-16 ° C for 20-25 days. The malolactic fermentation is prevented to maintain the freshness of the taste and the wine ages in steel on its own yeasts before being bottled.
