Amarone della Valpolicella Classico Sant’Urbano 2017 with own wooden box
Speri produces only one Amarone della Valpolicella and makes it from its most suitable vineyard: that of Monte Sant’Urbano in the village of Fumane. Speri's Amarone Classico Sant’Urbano is produced only in favorable years, as it aims to represent the excellence of the winery with no compromise: a wine of great elegance, strength and predisposition to aging. It is a classic Amarone in all senses: it comes from the Valpolicella Classica, that is the original land, and is elaborated with precise choices from the vineyard to the bottle in respect of tradition. The cultivation system adopted is the high Veronese pergola, healthy and sparse bunches of only native grape variaties are chosen. The 100-days drying takes place in special rooms located in the countryside, the so-called “fruttai” where the grapes are spread on bamboo racks called "arèle". No forced ventilation is practiced, but it is only the dry climate and the natural ventilation that causes a 40% decrease in the weight of the grapes with no formation of rot.
Fermentation with maceration of the dried grapes is slow and lasts for several weeks. After racking, the wine undergoes malolactic fermentation. Finally, the wine ages for 24 months in 500-liter French oak barrels and for 18 more months in large Slavonian oak barrels. It ages in the bottle for at least a year before leaving the cellar.
