Alto Adige Valle Isarco Riesling Aristos 2021

Cantina Valle Isarco’s Aristos line includes wines made from selected grapes, coming only from the most suitable places for each variety and the vines are cultivated to produce particularly low yields. The aim is to obtain classy wines, representative of the grape variety and capable of longevity. For the Riesling Aristos only the best vineyards are chosen between 520 and 650 meters above sea level facing south and south-east. The soil is alluvial, gravelly and shallow, with minerals such as quartz and mica. The vineyards have a slope of 50%, are terraced and produce very low yields.

The harvest took place in mid-October, when the Riesling grapes were fully ripe. The grapes are gently pressed and left for a short time in contact with the skins. Then the free run must ferments in stainless steel vats at a low temperature. The wine does not undergo malolactic fermentation and ages in steel for 7 months in contact with its fine lees.
