Alto Adige Valle Isarco Sylvaner Aristos 2021

The Aristos line of Cantina Valle Isarco includes wines made from grapes selected only from the most suitable places for each variety and the vines are cultivated to produce particularly low yields. The aim is to obtain classy wines, representative of the varietal and capable of longevity. The grapes for the Sylvaner Aristos come from sunny vineyards around the Sabiona Monastery between 550 and 700 meters. The soil is gravelly of alluvial origin and is not very deep. The result is a full-bodied and complex wine that expresses the original character of Sylvaner.

The grapes are harvested in late September. They are pressed and left for a few hours in contact with the skins. The liquid must then ferments at a controlled temperature in stainless steel vats. The wine ages for 7 months on the fine lees in steel vats and in large acacia barrels. Malolactic fermentation is not carried out.
