Alto Adige Valle Isarco Gewürztraminer Aristos 2021

The Aristos line of Cantina Valle Isarco includes wines made from grapes selected only from the most suitable places for each variety and the vines are cultivated to produce particularly low yields. The aim is to obtain classy wines, representative of the varietal and capable of longevity. The grapes for the Gewürztraminer Aristos wine are harvested from the sunniest steeply sloping vineyards between 550 and 650 meters above sea level. The yields are extremely low and the harvest is done at full ripeness at the beginning of October in order to have concentrated grapes, capable of giving a sumptuous wine that opens up with bottle aging.

After the harvest, the grapes are pressed and left to macerate on the skins for a few hours. After that the free run must ferments in stainless steel vats at a controlled temperature. The wine does not undergo malolactic fermentation and ages on the fine lees in steel for 7 months.
