Alta Langa Extra Brut Cuvée Aurora 2019
Alta Langa DOCG Cuvée Aurora is a vintage sparkling wine produced with the traditional method in Piedmont. Piedmont has always had an important sparkling wine tradition that goes far beyond that of Asti Spumante. Alta Langa DOCG is a denomination born in 2008 that recognizes this tradition. The Alta Langa area extends over the high hills south of the Langhe. The soil is mainly calcareous, marly and has a low percentage of clay. It is ideal for the cultivation of Pinot Noir for sparkling wine.
The fermentation of the base wine takes place in steel vat at a controlled temperature. Once the cuvée has been created, the second fermentation takes place in the bottle according to the traditional method and the sparkling wine ages on the lees for 42 months. At disgorgement it is dosed at the level of Extra Brut.
