Sauvignon Blanc 2023 Attems
Sauvignon blanc is one of the most popular and widespread white grape varieties in the world. It is appreciated for its penetrating aromas, rich in nuances from herbaceous notes to those of citrus and tropical fruit, which vary in infinite combinations depending on the territory of origin. In Friuli-Venezia Giulia Sauvignon blanc has found a favorable environment, both for the type of soil formed by calcareous marl and sandstone and for the sunny and breezy climate. Friulian Sauvignons have become a reference point for lovers of this wine. In this case the grapes come from different soils: partly ancient with sandstone of marine origin and partly rich in pebbles of alluvial origin.
The harvest is done by hand between the end of August and the beginning of September. A small part of the must remains in contact with the skins for a few hours before the start of fermentation, in order to extract the maximum of aromatic compounds. Alcoholic fermentation takes place in steel vats at a controlled temperature and the wine ages for a few months in contact with the fine lees without carrying out the malolactic fermentation.
