Poggio dei Gorleri's Apricus is a white wine that authentically expresses the characteristics of the terroir. The name ‘Apricus’ comes from Latin and means ‘exposed to the sun’, a clear reference to the exposure of the vineyards and the brightness that the wine transmits to the palate. The grapes come from calcareous and marly soils, which give the wine a characteristic sapidity and a pleasant sensation of mineral, almost marine freshness, and are harvested by hand, selecting only the healthiest and ripest bunches. This produces a high quality must, rich in aromas and flavours, which is then destemmed and gently crushed to separate the must from the skins and seeds. The must obtained is transferred to stainless steel tanks, where alcoholic fermentation takes place at a controlled temperature. This phase is essential to transform the sugars in the must into alcohol and carbon dioxide, and to develop the wine's characteristic aromas. During fermentation, the must remains in contact with the skins for a short period to extract the aromatic and colouring compounds. This phase is very delicate and its duration varies depending on the style of wine to be made. At the end of fermentation, the wine is separated from the lees and transferred to other tanks for the maturation phase. Apricus is matured in stainless steel tanks for several months, during which time the wine stabilises and refines.
