Valpolicella Ripasso Classico Superiore Le Poiane 2019
Valpolicella Ripasso Le Poiane combines the liveliness of young Valpolicella red wine with the softness and characteristic flavors of dried grapes. It is in fact a young Valpolicella, which undergoes a second fermentation triggered by the addition of wet Amarone and Recioto pomace, that is pomace of previously dried grapes. This second fermentation increases the alcohol content of the wine and gives it a characteristic bouquet of jam and dried fruit notes. The subsequent aging in wood increases its complexity and harmony. The grapes for the Valpolicella Ripasso Le Poiane come from the classical Valpolicella, in particular from the villages of Marano and Negrar.
The haverst is manual at the beginning of October. The wine is obtained with a red vinification of fresh grapes as if it were a Valpolicella. It then waits for the Amarone and Recioto to be drawn off and undergoes a second fermentation in contact with the still wet Amarone marc. Subsequently, the wine also undergoes malolactic fermentation and ages for one year in barrique.
