Mordese Cabernet Franc 2018
Mordese wine is a 100% Cabernet franc produced by the modern Vallepicciola winery in the south of the Chianti area, in the village of Castelnuovo Berardenga. The name Mordese is the name of the vineyard where the grapes come from; it is located at an altitude of 350-400 m above sea level and has clayey and calcareous soil, suitable for the cultivation of Cabernet franc. Cabernet franc is a more refined and delicate variety compared to Cabernet sauvignon; it is also more difficult to cultivate, because if it does not ripen well it can leave too many green and unripe notes. But in the vineyards of Vallepicciola this does not happen, in fact the vineyards enjoy great brightness and a fairly warm microclimate.
The harvest takes place in the first ten days of October. The grapes are de-stemmed and crushed and fermented in steel vats at a controlled temperature with a maceration of about 20-25 days. The wine undergoes malolactic fermentation in new French oak barriques and ages in new barriques for 14-16 months.
