Prieuré is an important and traditional sweet wine, produced with Moscato bianco grapes grown on the slopes of the Alps and dried indoors for over two months. It has been produced for centuries, it is perhaps the most traditional and historical wine of the Aosta Valley, certainly the best known in its history, it used to be served at the tables of European courts like the most famous wines of the continent. It is a sweet wine with very elegant aromas and a pronounced taste but balanced by adequate freshness thanks to the growth of the grapes in a cool and sunny environment. Moscato bianco is grown in the township of Chambave and in the neighboring villages on sandy soils of morainic origin, which give finesse to the wines. The vineyards are located on slopes between 450 and 680 meters above sea level and enjoy significant daily temperature variations in summer.
The harvest takes place between 20 September and 5 October starting from the lowest vineyards to finish with the highest ones. Only the whole and perfectly healthy bunches are selected in order to dry in boxes indoors for over 2 months. Subsequently the grapes are crushed and undergo a cold maceration for about 2 days before the start of fermentation. The liquid must ferment in stainless steel vats at a controlled temperature. Being a very dense and concentrated must, fermentation is slow and stops after 30 days with a significant amount of residual sugar. The wine ages in steel for over one year in contact with the fine lees.
