Trentodoc Extra Brut "1673" Riserva 2014
The year 1673 in the label of this sparkling wine is the year of birth of the Cesarini Sforza family following the wedding of Livia Teresa Cesarini and Federico Sforza. The Cesarini Sforza have always been linked to the city of Trento and their sparkling wines are mainly linked to the territory. The Trentodoc Riserva 1673 sparkling wine is produced with only Chardonnay grapes harvested in the highest vineyards of the Cembra Valley between 550 and 670 m above sea level. The vineyards have a prevalent exposure to the south and south east and a sandy soil rich in porphyry. The sun light allows the grapes to ripen perfectly and the high temperature variations between night and day favor the development of flavor compounds and the conservation of acidity in the berries.
Trentodoc Riserva 1673 is a particularly fresh and savory blanc de blancs with complexity due to the long aging in the bottle. It is an excellent representative of the Cesarini Sforza range of wines and the Trentodoc denomination of mountain bubbles.
The harvest is manual in crates and takes place in the first days of September. The whole bunches are gently pressed, the must is clarified by static decantation at low temperature. The base wine derives from an alcoholic fermentation in stainless steel vats at a controlled temperature and ages on its lees for 6 months. The second fermentation takes place in the bottle according to the traditional method with an aging on the lees for 5 years.
