Trentodoc Brut Aquila Reale Riserva 2011
Aquila Reale is the most important label of the Cesarini Sforza winery, the highest expression of the mountain Chardonnay from a single vineyard in their estate. It is a blanc de blancs, obtained from white grapes only and is a Riserva as it ages on the lees for over 7 years. The grapes are grown on the left side of the Adige river near the beginning of the Cembra Valley at 500 m above sea level. The soil of the vineyards is shallow, of alluvial origin, with a sandy matrix, slightly calcareous with porphyritic rocks and debris, resulting well drained; moreover, this vineyard is conducted with organic farming. Opposite the vineyards to the west rise the Brenta Dolomites, whose peaks shade the vineyards in the evening, accentuating their daily temperature ranges. The idea of producing a sparkling wine only from these vineyards is based on the fact that the grapes always ripen here with excellent results in terms of both power and elegance. For this reason, the Trentodoc Aquila Reale is a real cru of Cesarini Sforza, to which the time of long aging on the lees allows to express the complexity and depth of the mountain Chardonnay.
The harvest is done by hand in the first ten days of September. The whole bunches are gently pressed and only the purest free-run must is used for the production of the Trentodoc Aquila Reale. It carries out the alcoholic fermentation in barrique and rests on the lees for a few months, during which it also carries out the malolactic fermentation. The second fermentation takes place in the bottle according to the traditional method and the sparkling wine ages in the bottle with the lees for 90 months. Finally, it is dosed with 4 g / l of sugars.
