Valpolicella Ripasso Classico Superiore 2020
Ripasso is a modern wine created as a halfway wine between a Valpolicella produced with fresh grapes and an Amarone produced with dried grapes. The word "Ripasso" itself refers to the practice of adding the wet pomace of Amarone to a fresh Valpolicella wine at the end of the latter's fermentation. These fermented wet skins of dried grapes still have residual sugars that trigger a second fermentation of the Valpolicella wine, increasing not so much the body as the complexity of the aromas and softness. It is produced with grapes from the classic area and with low yields.
From the alcoholic fermentation of fresh grapes in steel, a medium-bodied fresh red wine is obtained. After a few months, the Amarone pomace is added, causing a second fermentation that increases the alcohol content, softness and aroma of the wine. Finally the wine ages for 18 months in large Slavonian oak barrels
