Taurasi Antica Hirpinia is a DOCG red wine from the Irpinia region of Campania. It is considered one of the most important and long-lived Italian red wines, often compared to the great Bordeaux red wines for its structure, complexity and ageing potential. The harvest is carried out manually in the first weeks of October, when the grapes reach optimal ripeness. The grapes are destemmed and crushed to separate the must from the skins and seeds. The must obtained ferments in temperature-controlled stainless steel tanks. During this phase, the yeasts transform the sugars into alcohol, releasing the aromatic compounds typical of Aglianico. The skins remain in contact with the must for a prolonged period, even more than two weeks, in order to extract the tannins and colours characteristic of Taurasi. After alcoholic fermentation, malolactic fermentation takes place, which softens the wine's acidity and rounds off its flavour. The wine is aged in large oak barrels for a period of 3 to 5 years, depending on the style desired. During ageing, the Taurasi is enriched with aromatic complexity and the tannins are softened. Before bottling, the wine undergoes a careful clarification and filtration process. Afterwards, it is refined in the bottle for at least one year before being marketed.
