Taurasi 2018
In the province of Avellino, Aglianico grapes give their best varietal expression. It is in the area included in the DOCG Taurasi. The secret of this regional wine consists in the combination of an almost mountainous climate and a unique soil, consisting of a clayey limestone matrix permeated with volcanic infiltrations. Aglianico ripens slowly in these hills and is harvested late. The yields are particularly low and the planting density is high. Taurasi wine is aged for at least 3 years, of which at least 12 months in wood.
The grapes ferment in steel vats at a controlled temperature with a very long maceration on the skins of 3-4 weeks, in order to extract the maximum of phenols. The wine also carries out malolactic fermentation and ages in medium toasted French oak barriques for 18 months. It ages also at least 9 months in the bottle.
