Prosecco Superiore DOCG Strada Chiesa di Varaschin is produced using the Charmat method, which involves a second fermentation in an autoclave. The grapes are harvested manually and subjected to a soft pressing. The must is then fermented in steel at a controlled temperature. The second fermentation takes place in autoclave for at least 3 months, giving the wine its characteristic fine and persistent perlage.
