Sparkling Wine Metodo Classico Cuvée 36Brut
Casa Caterina's wine repudiates the labels and although it is an exquisite traditional method sparkling wine produced in Franciacorta with Chardonnay grapes it is labeled without reference to the DOCG. The Cuvée 36 sparkling wine by Casa Caterina is produced with biodynamic agriculture, with spontaneous fermentation and prolonged aging on the lees. It is a sparkling wine that combines delicacy and depth. It has the elegance and freshness typical of Chardonnay and the finesse of the Franciacorta territory. It does not lack body and fullness to the taste, despite a low dosage.
The grapes are harvested by hand. From soft pressing, a delicate free-run must is obtained which ferments in steel vat at a controlled temperature with indigenous yeasts. After the second fermentation, the sparkling wine ages on the lees in autolysis for 36 months.
