It is not a real sparkling wine, but just a refermented wine with a sparkle. This practice can be said ancestral method, as the wine is sparkling simply because it is bottled before the completion of the alcoholic fermentation with its yeasts and with the bottle closed with a crown cap. Fermentation ends in the bottle and causes the formation of a slight fizziness.

The wine has a light body and an intense, absolutely dry and fresh taste. It is made with grapes harvested in the morning and left to rest in a cool place for a whole day before being pressed to favor a skin maceration that enhances flavor intensity. They are then pressed and the free-run must ferments slowly at a low temperature. Before the fermentation is completed, the wine is bottled without filtration with its own yeasts and without adding sulphites.
