Soave Classico Monte Carbonare 2020
Monte Carbonare white wine is a historic Soave Classico label from the renowned Suavia winery. Today Carbonare has been recognized as one of the 29 additional geographical units of the Soave appellation. Carbonare overlooks the Val d’Alpone (Alpone Valley) and is distinguished by its dark soils formed by basalt of volcanic origin. For this reason, the Monte Carbonare wine by Suavia has a particularly mineral taste, which has earned it 17 times the “3 glasses” award from the Gambero Rosso guide and numerous other awards from guides and critics from all over the world. It is a particularly important Soave Classico that represents the best of the appelation, it is produced with only the local Garganega grape and aged only in steel, precisely to preserve its integrity and purity.
The grapes are harvested late at full ripeness. They are gently pressed and the free-run must ferments in steel vats at a low temperature. Malolactic fermentation is avoided and the wine ages in steel for 15 months in contact with its own lees. It is finally bottled with a light filtration.
