Sicilia Grillo Sur Sur 2022
The word "Sur Sur" derives from the Arabic and indicates the cricket insect, the protagonist of spring. Sur Sur wants to be a spring white wine, joyful and graceful based on the native Grillo grape variety. Grillo is a typically Sicilian vine variety grown mainly in the province of Trapani and is also the basis of the production of Marsala. The grapes of the Sur Sur white wine come partly from the Contessa Entellina estate in the Palermo hinterland and partly from the hills between Marsala and Salemi in western Sicily.
The Grillo harvest for Sur Sur wine in 2020 took place between the end of August and the beginning of September. The grapes are pressed and the free-run must ferments in stainless steel vats at a controlled temperature of 14-16 ° C. The wine rests in steel for a couple of months before being bottled without carrying out the malolactic fermentation.
