Serraiola Shiraz is a red IGT Costa Toscana wine produced by Serraiola Wine, a winery located in the province of Grosseto, Tuscany. Shiraz grapes are harvested by hand when they reach perfect ripeness, usually between late August and mid-September. The grapes are destemmed and gently crushed to extract the must. The pressing is done in such a way as to extract the maximum colour and flavour from the skins, but avoiding crushing the pips, which could give the wine a bitter taste. The must is fermented in stainless steel at a controlled temperature. Maceration is the phase in which the must is left in contact with the skins to extract colour, tannins and aromas. Ageing in barriques gives the wine more complexity, structure and elegance. Throughout the vinification process, Serraiola Shiraz undergoes rigorous quality controls to ensure its excellence.
