The Côtes du Rhône Rouge is a classic blend of the area, made mainly from Grenache and Syrah grapes, sometimes combined with small quantities of Mourvèdre. This combination of grapes gives the wine a complex and structured aromatic profile. The grapes come from vineyards cultivated in the Côtes du Rhône region, characterised by gravelly, chalky soils that greatly influence the character of the wine.The climatic conditions of each year influence the ripening of the grapes and thus the amount of sugar present in the grapes, which will be transformed into alcohol during fermentation. The grapes are harvested at the peak of phenolic ripeness, destemmed and crushed. Alcoholic fermentation follows at a controlled temperature and with regular light extraction by pumping over. Racking takes about twenty days.
