The grapes are transported to the winery and sorted on sorting tables. They are then destemmed and crushed before being sent to temperature-controlled steel tanks for alcoholic fermentation. Thirty per cent of the grapes undergo pre-fermentation maceration at a temperature of 5-6°C. During the approximately 18 days of alcoholic fermentation, the mass is reassembled several times a day at a temperature of approximately 26°C.
After fermentation, the wine separated from the skins is transferred to stainless steel tanks to complete malolactic fermentation. Subsequently, the wine begins the ageing phase in stainless steel, which lasts for approximately 7 months. After clarification and filtration, the wine is bottled and left to mature before being introduced to the market.
