Santero 958 Asti Otto e Mezzo

The sparkling wine Otto e Mezzo of the 958 Santero line is a traditional Asti Spumante DOCG, in the midst of the Piedmontese tradition. It is produced with 100% white Moscato grown in the Monferrato area and is distinguished by its aromatic scent of sage and white peach. The bottle of Asti Otto e Mezzo di Santero is extremely versatile, to be uncorked on any occasion for a sweet toast.

The grapes are gently pressed and the free-run must is clarified by cold static decantation. The liquid must is stored in the cold until the moment of production and bottling. It is fermented directly in a pressurized autoclave; the fermentation is interrupted before the end by lowering the temperature, the yeasts are eliminated and the sparkling wine is bottled preserving the primary aromas of the Muscat grapes.
