Rosato Cantalupi 2023
Cantalupi is one of the four estates of the Conti Zecca in Salento whose vineyards are located in the village of Salice Salentino. According to the guide Vini Buoni d’Italia 2021 of the Touring Club "the Cantalupi line identifies a historical brand that has always been a guarantee of good drinking". Rosato Cantalupi corresponds to the regional tradition of fruity and round rosé wines and is based on the Negroamaro local variety cultivated on clayey and calcareous soil.
The realization of the Rosato Cantalupi involves a maceration of the must with the skins for 24-36 hours. Afterwards the fermentation of the liquid must takes place in stainless steel vats at a controlled temperature. The wine remains in concrete until bottling.
