Cantine Varaschin's Reluì Valdobbiadene DOCG Extra Brut is aged on the lees for a period of at least 45 days. This period of ageing is compulsory for all DOCG proseccos, but Cantine Varaschin chooses to prolong it to give the wine greater complexity, harmony and finesse. During maturation on the yeasts, the wine comes into contact with dead yeast cells, which release complex aromatic compounds into the wine, such as aromas of bread, bread crust, brioche, dried fruit and spices.In addition, the autolysis of the yeasts helps to soften the wine and make it creamier and more velvety.
