Prosecco Quinta Nota Gran Cuvée Extra Dry is made using the Charmat method, which involves a second fermentation in an autoclave. The grapes are crushed and the must obtained ferments in steel at a controlled temperature. During this phase, the grape's natural sugars are transformed into alcohol and carbon dioxide. The wine is filtered and the ‘liqueur de tirage’, a mixture of concentrated must and selected yeasts, is added. The wine is then introduced into an autoclave, a closed pressure container, where re-fermentation takes place. During this phase, bubbles develop and the wine acquires its final organoleptic characteristics. This wine is produced in limited quantities and is available in 75 cl bottles.
